In CN, the game is just called 'Yuanshen'. This 2 hanzi name is similar enough in structure to miHoYo's previous product, Benghuai 3 (Honkai Impact 3rd), to ring a bell. Honkai was also bigger in CN, so people could easily know this was a new game by the same company.
In EN, Honkai Impact 3rd had the 'Impact' part added for 2 reasons: In reference to an in-lore event, the Impacts, and to emphasise the 'action driven' nature of the game.
For Genshin, the Impact was added for brand recognition, so people would be aware of its ties to the previous game.

I could swear there is at least one impact frame in each region. At least I think I can remember one instant except for mondstadt.
That being said, if I remember correctly, ant other language don't have the word impact, only English. it was originally a branch off from Hi3rd, honkai impact 3rd. So they left the word "Impact" in the title.
