Send hoyo your UID, describe your situation, give details that could prove that this account truly belongs to you, and they can probably find what email you used for your account.

I was able to figure out the email but I have no idea what the password is and I can’t recover it since there’s no recovery email attached to it😭 I wish younger me thought this through more

thats just rip then from my side as I idk what else u can do. U can try contacting google support but I really doubt they will be able to do anything if that acc has not a single way to confirm ur identity.

Try to find the address at least, if you have your hoyoverse account username it can be used to log in, but if you don't have access to your email you won't be able to do that anyway, although it should show first and last letters of the email address you have used.
If you still can't find the email you need, well, you'll have to contact support. You'll need your UID, some receipts if you bought anything in Genshin, and some you'll need to know some details about your account (when it was created, where it was created, what email you used, what kind of device you used to create the account, what kind of device you used the most to play the game, etc.) and provide as many details as you can.
For receipts part - you either need a receipt of your very first payment in Genshin or a bunch of receipts for all payments during a some month (can be any month of any year), you'll also have to provide a calculated amount of money spent and in which currency.
I'm pretty sure there was a subreddit with a more in-depth guide on account retrieval, but I can't remember which subreddit it was, maybe someone else could provide a hint to it.
