People would say because of Columbina, but I actually doubt that she'd do something rash like that if her fuse didn't completely blow. In her 6.3 voicelines, she seemed fairly calm before the fight.
I truly think it's because of Pulonia.

Fight cutscenes in Genshin are never very well thought or logical or show how the characters would actually fight.
They are mainly made so characters can aura farm while fighting eachother. So don't expect a very good reasoning as to why Sandrone just goes punch Dottore.

I mean, even though I don't remember it ever being officially confirmed either way, but Sandrome's body may well be completely artificial in nature.
That is to say, she could have just as easily stuffed her fist (or more) with high explosives to try and take Dottore out in a surprise explosion, regardless of how she ends up herself from this.
And that's assuming that we're seeing Sandrome's 'main body' here to begin with, wouldn't surprise me if she just made a spare body for a 'suicide' attack while she herself is no worse for the wear.
