The only thing you truly need a geo character for is elemental monuments and you can use traveler for those.

The game usually offers a brute force solution to clear content if you don't have the exact gimmick the fight is built around... but sometimes, it takes a *lot* of extra brute force if you can't fulfil the gimmick conditions.

Needed no, but some fights are easier with geo characters. But SO rotates different bosses and when new characters are released the end game content is tuned to favour these characters. Then the next SO it's tuned better for the new banners.

Golden Wolflord boss is the only one that truly *needs* Geo, but ranged characters or top-tier DPS can brute-force it easily enough. The Legatus Golem boss is also a contender for Geo shill, but Overload also breaks it's Geo shield fairly fast. But ofc, they can do a Crab Tsar and add a local legend that says "Do Geo damage or I waste 30s and one-shot you"

Tell that to the Crab Tsar, where if you didn't have Bloom damage of any kind, it did exactly that (though you can i-frame the one-shot and then DPS it down in the 40s before it re-shielded, with Mavuika/Skirk level DPS at least). Plus, for the Stygian version if you brought Pyro for Burgeon Mavuika, the seeds exploded and one-shot you.
And then Lauma+Aino+Mona could one-shot it.

There have been several large enemies with large geo shields that have popped up in the abyss (the worst being Golden Wolflord), but most geo shields are also weak to claymores. It's relatively easy to bypass them without geo, so they're more forgettable than most gimmicks.

The biggest place where you "need" geo is a Theatre rotation where geo is one of the elements. You don't technically have to have geo; theatre does give you 3 elements per rotation, but making up numbers can get tricky, especially if you have multiple "nonmeta" elements, like that time Mihoyo pushed out a Hydro/Cryo/Geo rotation.
In terms of bosses, the centaur released at the end of Fontaine is the boss that rewards having geo specifically the most. It gets somewhat awkward in IT if the element rotation bans your typical anti geo shield characters. IT will typically give you some trial geo characters in that situation though.
Wolflord and the Hypostasis exist, but neither of them push Geo particularly hard.

Technically no. But that can be said about every 5 star in the game. I don't have any Geo 5 star and cannot save enough to get Navia as I have other characters I want.
Ultimately you should decide why you want a character. Do you like a char? if so get them, you can't go wrong. Are you trying to build a specific team? them you'll need to share your character roaster for people to offer advice.

It's not a must, but it can help sometimes. I don't think I have/use any geo DPSes, but I've survived just fine. There're few bosses that require (?) you to apply geo element, but you can use any geo character for that. My most used geo characters are probably Albedo, Zhongli and Yun Jin, who are all supports.
If you like Zibai, then get her. If not, wait and save for another character.

It is not a "must" but if you are gonna attempt like Lunar IT. not having 5star geo might make it so you don't meet the minimum characters needed depending on what the other two elems are that run with it.
Like Lunar mode theatre is a minimum of 28 characters.
So if the IT season elements Hydro + Geo, and you haven't been pulling 5stars in those elems you might have a hard time reaching 28 characters to enter the mode.
