I found a solution for PS5 DualSense controllers for Genshin Impact PC!!
First, let me explain my situation:
When I connect my controller to my PC via cable or Bluetooth and change the controller type in the settings, I see the PS5 controller icons, but my controller doesn't work. It lights up white, but nothing happens...
FYI, I never had this problem with my PS4 controller.
The solution was very simple.
Go to Control Panel > Devices and Printers (right-click and select Open) > Select the PS5 controller, in my case DualSense (right-click Game Controller Settings) > advenced> and finally select DualSense.

My problem is a bit different. If the cable is connected when I boot into the game, I get the DS as default controller. But if I'm only in Bluetooth mode, it will default to keyboard and mouse as the default controls. I have to go into the settings menu to change it to DS which is annoying.
This didn't happen for the DS4.
EDIT: Your post made me reinvestigate the issue. I am now using an app called DualSenseX (a successor to DS4Windows) to get the dualsense to emulate a DS4 controller, and now I can boot up the game in bluetooth mode and it defaults to the controller instead of keyboard and mouse. It will have DS4 button inputs but that's not the end of the world. The face buttons are color coded at least instead of white.
I have a standard xinput controller and Genshin still refuses to consistently recognize it. Literally no other game runs into this issue.
