During their early history the Nobles would only learn swordmanship and bowmanship as they viewed the spear to be a peasant’s weapon, something the common footsoldier could wield would never be a good weapon for their egos. Thus any spear users were looked down upon and the skills slowly faded from the higher class, thats why we dont see many Knights using spears
Most of the Knight NPCs we find have a sword at their hip, while those that use spears aren’t modeled like Mika’s brother Huffman
In essence, most of Mondstadt’s forces are sword and bow users, while spear skills exist in the modern Knights like in mika, the Knights mainly use swords
Anyway, damn good art, hope to see Fontaine with their muskets!

that is during their early period, I'd imagine after the successful coup against the nobility, the knights would change their ways. Besides we have the Favonious Spear ingame no? Also even IRL swords are especially the one handed ones are used as backup weapons the same way Militaries see the pistol. Finally as said by another person here, the polearm in the picture are depicted as Pikes mainly used for formation warfare.
And yea, I would like to see Fontaine's gardes with their Muskets

swords are versatile, but in formation warfare, spear is king. Swords are ideal for urban combat in close quarters however... so excellent for a police force inside the city.

You are correct that a shield wall would not be terribly effective aganist Lawachurls. However, what I illustrated here is a pike formation. A Lawachurl could easily impale itself aganist a formation of armoured knights with long pointy sticks that are very likely magically enchanted.
On the other hand, it still would not be fun for the knights if a lawachurl jumped on them.
