You can leave at any time by closing the game (after the savepoints would be best). And then once you start it again you won't be in the story, and there'll be a domain entrance if you want to go back in.

\- Game tells you at the very start you need time for story specifically
\- Game constantly reminds you that your progress is saved
\- Without telling, game also saves on almost each POV switch
\- Majority of the story is not in actual open world but "Domains" that copy parts of open world but allow to easily change stuff without having to affect the whole open world
You can quit at any POV switch, which happen ever 5-20 minutes. Even if you can quit at any point, you would still need to quit the "Domain" and then go explore open world anyway

I promise that you can. The entire game is actually built around the fact that we, as ADHD gamers, will begin an Archon Quest before completely rabit-trailing to farming mats or taking pictures with random lonely hilichurls on clifftops.
So you can indeed walk away from pretty much any AQ subquest, with a few notable exceptions:
\- Can't leave a domain without redoing it, usually
\- Special story modes will save your progress but require you to come back to a location to continue it
\- Some hidden quests and even AQs/World Quests are triggered by "trigger volumes" so you can accidentally start something you never meant to. You can usually walk out after a moment.
