Does it? Fairly certain a five minute conversation with Regrator would yield that information. Or Sandrone, I'm not sure who keeps track of the missions.

Since he mentioned Regrator as being the one we are ultimately paid by I took that to mean he was the one actually managing the Adventurer’s Guild from Snezhnaya. Maybe Sandrone had a hand in Katheryne’s creation but there’s no way she would have given a shit about keeping an eye on Guild paperwork.

Or just that Sandrone/Katherine does the paper work but it's Pantaloons that provides the money. Morning about it suggests which is "really" in charge and if we're going to go on to kill Pantaloons then the story will likely be about Sandrone taking over/retaining control over the organization afterward.

We always seem to be the one outlier or special case that moves the story along so I would imagine he has some interest at observing us and seeing how we may change any expected outcomes he has based on the information hes gathered before we showed up and got out grubby little mitts all over everything lol

How are the daily quests important for Dottore's experiments? They aren't, the commissions get posted by the locals and the Guild dispatches adventurers to deal with them. Dottore is just mentioning this to Traveler as if to say "Aren't you tired of being a functioning member of society? Don't you want to go apeshit on the people who are beneath us?".

I mean we're getting the reward from Katheryne, whose Sandrone's creation, so they probably keep a log of every time someone completes a commission and have probably noticed Traveler does it a lot

Sandrone made Katheryn. And we are famous for doing a lot of her work, so it's not difficult to keep tabs on us. Even Nefer would have a general idea of what we do in our day-to-day life without watching us 24/7

The Traveler is a person of interest to the Fatui. So their organisation will have a detailed file on them which will be accessible to all of the Harbringers.
This will definitely include what the Traveller has been up to since his appearent in Mondstad.
