Because it's just a recording studio that any artist can use? It's not like it was a Beatles-exclusive shrine that has seen no use since The Beatles disbanded. It's just a place of work.
And it's not even the only time Genshin used it, the Nod-Krai symphonic performance was filmed in that studio.

99% of people wouldn't be able to tell the difference between a famous orchestra at a famous studio vs a generally competent generic professional orchestra at a totally average studio.
I've never heard anyone complain about Square Enix having low quality music, and they record their music in house.
Going out and hiring the LSO to record at Abbey Road Studios is a marketing decision, not a game quality decision.

Why would that matter? The studio doesn't gain some kind of support field lasting for all eternity when overpowered bards cast their song magic.
