There is a little bit of feng shui and wu xing elements at play in some of Genshin's character choices. Bows aren't typically associated with earth, which may explain the reason for that.
We might see that change more in the future as they start to adopt more types of real world mythology into the lore.
It's honestly fascinating stuff and really explains a lot of the differences in how the east and west represent magic, weapons, and units in fantasy games. Western games would easily tie earth with ranged weapons because of things like ballista, slings, catapults, heavy ranged units, and modern guns. But eastern games typically don't.
