There's torch every 10 meter or so, just light it up with Amber and you should be good

I don't think there is any charachter who is immune to freezing in Dragonspine maybe you mistake it with another game. There is the food called gulash that can slow down the bar but mostly you just need to stay close to the fire.

The closest anyone gets to immune to the cold is Dehya. The bar still fills up, but as long as she isn't taking any other damage, her A4 passive keeps up with the cold damage so the cold can't kill her on its own.
