what is a good number to get her crit rate to, I have her weapon so that is doing a lot of heavy lifting, should I just get to 50% and call that a win?

Mine is 72 with her passive.

There's no point in high crit damage% if you don't crit in the first place. If you're building her as sub-dps then get her CR to ~65% +15% from her passive. Crit Rate circlet is your go to

If you don't care about damage sure. The team you're playing her on also matters. One build doesn't fit all for every team.
Columbina should be at 85% Crit Rate optimally for most teams.

you get 15% crit rate from her passive and optionally 10% cr from lauma, so your goal should be ideally 85%/75%. If you are playing her onfield on the sky set then thats an addiotnal 30% crit rate so then youd want only 45%. But you also might want to get that energy recharge up, even with weapon you still want around 150% (so probably just er sands).
Tbh, if you are not playing her on field i would also recommend to rather put her on silken moon instead of the new set. The new set is kinda bait. Because her kit is split between half buffing and half damage, in LC teams putting the new set on ineffa and her on silken has better results. And in LB if you are playing her with lauma then the 40% lunar-dmg you get does not affect the damage from laumas ult buff, so its usually better to just put her collumbina on silken there (also because she appreciates the 20% er from the 2p) and lauma on either deepwood or just high em build with 2p2p/Gilded Dreams.

First off, Level to 90 to squeeze out the rest of her base stat
Use a HP weapon to help get her to 35K Max HP. Any more than that is not important.
Get artifacts that focus on ER and Crits. 160 ER if I'm not mistaken is pretty good and try to get Crit Damage to 150%+ and then get as much Crit Rate you can from the rest of the sub-stats
If you don't have her 5\*, then try Prototype Amber, as that will get you HP% and help with ER.

The closer you can get to 100 crit rate, the better in most cases. The ratio people typically recommend is 1:2, (50 CR & 100 CD). That will net you a 50% effective increase to damage.
Check which artifacts you have now using this formula as a base:
Crit DMG × (Crit rate ÷ 100)
What you have now is a 75.8% effective increase in damage, but even something less impressive looking like 65.5 CR and 120.8 CD will net you a 79% increase.

everyone here is wrong, your first priority is getting to 160+ ER MINIMUM, worry about crit after

Start by getting her to level 90 since that helps with HP and crit rate.
As for what you should aim for: 100%. Columbina is easy enough to build that it's very reachable. Thanks to her passive, you can stop at 85%. In a Nefer team with Lauma, it's 75%, as a DPS with Lauma, it's 45%.
You can't just "stop at 50% and call it a day" while you show 200% crit damage. Keep a good balance of stats. It's pointless to have so much crit damage if you never crit, and it's pointless to crit all the time if you do no crit damage. The 1:2 ratio should be the goal. Try for 70%/140% for a start (which shouldn't be too hard with her 88% CD weapon and 15% CR passive), aim for 85% (pre-passive)/200% if you feel like grinding a bit.
Keep in mind you need to avoid neglecting her other stats. Off-field you want about 170 to 180% ER to burst every rotation, on field it's closer to 130%. And you want at least 35k HP to max out her other passive, ideally before hydro resonnance comes into play because you will usually use her in solo-hydro teams.
