I know a lot of my characters are under-leveled for AR 50 (haven't ascended it yet) and I'm working on that

escoffier would not fit with any of your DPS characters, so ineffa is the better option.
also its best to only level one character at a time (and do bennet next)

Ineffa+columbina will make your life so much easier, and level up that sucrose to go along with them.
The chef requires a premium team full of limited 5* to be worth, which is skirk/ayaka+furina+yelan/shenhe, much more expensive.

you seem to have no cyro dps (ayaka, wrio or skirk), so pull ineffa (or zibai, she is also good)

Ill be honest with you, both are excelent characters that can be useful for any account. Looking at what you have, short term answer would be Ineffa, that would make you have more flexibility for your teams.
So far you have some good teams that dont share units between them. (Example Teams):
Lauma - Columbina - Nilou - YaoYao
Gaming - Citlali - Bennet - Sucrose
By pulling Ineffa you can divide your Lunar Team into 2 teams:
Hu Tao - XingQui - Ineffa - Columbina
Lauma - Nilou - Aino - YaoYao
Gaming team is the same.
You will lose on damage for your Nilou team but have flexibility to play 3 teams with good DPS. If you want to pull Escoffier its still okay, long term even might be better depending on content they release but note Escoffier is a Freeze Support and as such doesnt provide much by herself. She pairs amazing with other Cryo and Hydro units so if there are some you like, you can boost them with Escoffier.
If you like Escoffier, there is nothing wrong in getting her, she can help you in future to create teams that can clear some bosses other teams might struggle with but to get there you will need another unit that works with her. Hopefully some of this was useful.
