It does if you don't do it on your reset day. If you finished AQ say Wednesday and do chronicles then it will reset next Wednesday, but if you decided to now do it Friday then it will reset next Friday.

They do. The game is terrible at communicating this, but it actually saves throughout at relatively short intervals. Virtually every advancement of the quest, scene transition or a loading screen is a save point. Literally never you have to replay an entire hour.
