I actually have the opposite opinion, when she is used she is often turned into a generic tsundere.
In her story quest she explained herself that she acts the way she does not because she's embarrassed or socially inept, but because the people of Mondstadt get suspicious of her if she's too nice (because she's a Lawrence). She didn't act that way with her uncle for example, since he's also a Lawrence, or with YanFei (I think), since she's not from Mondstadt.
But in later appearances she just seems to be a generic tsundere who always acts like that out of embarrassment. Like in the summer event when she saved her cousin.
I understand that "vengeance will be mine" is Eula's shtick and what makes her entertaining, but I think Eula is more interesting when they focus on her working to be good even though she ends up disliked by both "factions" of Mondstadt (by regular Mondstadters because they don't trust the Lawrences, and by her family because she doesn't think about taking back Mondstadt like they do). Let her do her bit when she interacts with civilians and knights, but don't do it when it doesn't make sense or you'll turn her into a generic tsundere.

I remember that Potion-making event in Mondstadt a while back (a year or two ago?) and Eula made an appearance with Beidou, who she had just made friends with.
It was honestly one of the best character interactions I think I've seen her have. Beidou was a great friend to Eula and made her feel more comfortable and appreciated (Beidou has that affect on people, she's a wholesome Gigachad).
I'm hoping it wasn't a one off and we get to see them both together again sometime.
