Some quests are stupid long, and they even block you from doing other stuff. It's hard, try to manage your time best you can!

Don't worry about catching up, just play at your own pace.
By the time you reach Nod Krai, Columbina might be powercrept already, so don't think about missing out in terms of power, especially when you are still in Fontaine.
I pulled Columbina purely because of Nod Krai's storyline; they made her a very easily lovable character, and I fell for it, but if you haven't even experienced Nod Krai's story yet, I don't see a reason to rush into pulling her. She will be replaced by the next meta soon enough.
I will keep using her though, cause I love her.

You have so much content between now and the end of escoffiers banner I really can’t imagine you can’t pull both of them Rn even if you aren’t grinding hard there’s just so much content especially if you said in another content you don’t even have Aino which means you have all the quests and nod krai stuff left to do.. you have SO many primos you can farm still, I would genuinely pull her, then save for escoffier.. besides it’s not like you can’t pull someone else to work with Columbina later.. you’re going to want at least something from nod krai on your roster foe your account.. it’s not ideal to only have one team to play as, eventually you’ll need more than one team for stuff

Just pull her dude, let’s be real there is so much content and primos between now and the end of escoff’s banner you can get a copy of both. Besides columbina is absolutely amazing, no one regrets pulling her she’s great. You can always add another character to work with her later

As someone with Columbina and no other Nod Krai characters, she does feel kinda meh. Wouldn't recommend her unless you got Flins, Nefer, or Lauma. Or plan to get Zi Bai.
